Almond Pistachio Date Bites
Ingredients
- 12 Medjool dates, pitted
- 3 Tbsp almond butter
- ½ c dark chocolate chips or melting chocolate
- 1 tsp coconut oil
- 2 Tbsp chopped pistachios
- Flaky Maldon salt, for garnish
Instructions
- Slice each date lengthwise and remove the pit. Gently flatten them so there’s space to fill the center.
- Add about ½ teaspoon of almond butter into each date.
- In a small bowl, melt the chocolate and coconut oil together in the microwave in 20–30 second intervals, stirring until smooth.
- Spoon or drizzle the melted chocolate over the filled dates (or dip them halfway, if you prefer more chocolate).
- Sprinkle chopped pistachios and a pinch of flaky Maldon salt over the top while the chocolate is still warm.
- Place the dates on a parchment-lined tray and refrigerate for 10–15 minutes, or until the chocolate hardens.
