Breakfast Soufflé Bites
These Breakfast Soufflé Bites are so quick to make, delicious, and fun to play with the toppings. Even better, you can make them ahead and freeze them to reheat on a busy morning.
Light, airy and packed with protein and a variety of nutrients, you don’t have to worry about what healthy breakfast to make in the mornings. Wrap them in foil, pop them in the freezer and when you want to eat them, reheat in the toaster oven or oven and they’re the perfect breakfast on the go meal.
Here are the add-ins I used:
- Mushrooms and Spinach
- Tomato, Basil and Mozzarella
- Mexican Fiesta – bell peppers and onions with fajita seasoning
- Broccoli and cheddar
- Jalapeño Popper – jalapeños and cheddar cheese
- Leftover Jamboree

Breakfast Soufflé Bites

Ingredients
For the base mix:
- 10 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp milk
For the toppings:
- 1/2 c spinach, finely chopped
- 6 mushrooms, finely chopped
- 1/2 c red bell peppers, finely chopped
- 1/2 c yellow bell peppers, finely chopped
- 1/4 c onions, finely chopped
- 1/4 c broccoli, finely chopped
- 2 jalapenos, minced (adjust to spice level)
- 1 tomato, diced
- 3 Tbsp basil, finely chopped
- 2 Tbsp shredded mozzarella
- 1 Tbsp fajita seasoning
Instructions
- Preheat oven to 400°F
- In a large bowl, mix eggs, salt, pepper, and milk. Whisk to combine all the ingredients to a smooth texture.
- Grease a muffin tin with cooking spray.
- Pour egg mixture about 2/3 into each muffin tin.
Add in toppings:
- Spinach and Mushroom
- Tomato, Basil and Mozzarella
- Bell peppers and onions sprinkled with fajita seasoning
- Broccoli and cheddar
- Jalapeños and cheddar cheese
- Any leftover toppings for the jamboree
- Bake for 20 minutes.
- Let cool for 5 before popping them out with a spoon.
- Enjoy the bites nice and warm or wrap in foil and freeze for later use!
