Broccoli Sausage Farfalle Pasta
Ingredients
- 1 lb Italian sausage meat (mild or spicy)
- 2 c Farfalle pasta, uncooked
- 2 garlic cloves, minced
- 1 c cherry tomatoes, halved
- 1 c broccoli florets
- 3 Tbsp tomato puree
- 1 tsp paprika
- 1/2 tsp red chili flakes
- 1/2 tsp salt
- 1 tsp ground black pepper, divided
- 2 Tbsp EVOO, divided
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat.
- Start by cooking the pasta al dente, according to the package directions
- While the pasta is cooking, toss the broccoli florets with 1/2 tsp salt, 1/2 tsp black pepper, and 1 Tbsp olive oil.
- Transfer to baking sheet and roast for 20 minutes.
- While the broccoli is roasting, saute the sausage meat by breaking it up with a spoon until almost cooked through.
- Add the garlic and a drizzle of olive oil to the sausage and cook until fragrant and the sausage meat is no longer pink.
- Add the chopped tomatoes to the sausage and garlic and season with paprika and chili flakes.
- Once those have cooked nicely stir in the tomato puree and let it cook for another 2-3 minutes.
- When the pasta is cooked, drain and stir it into the sausage and tomato sauce.
- Remove the broccoli from the oven and add it to the sausage and pasta. Give it a good toss to make sure everything is mixed well.
