Chickpea Orzo Skillet
Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 1 c dried orzo
- 3 cloves garlic, minced
- 4 c low-sodium vegetable broth
- 1 (28-ounce) can San Marzano tomatoes
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 c broccoli florets
- 1 bell pepper, chopped
- 1 Tbsp fresh basil (or 1 tsp dried basil)
- 1 Tbsp fresh oregano (or 1 tsp dried oregano)
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/4 c Parmesan cheese, grated (optional)
