Moong Sprouts Salad
Ingredients
- 1 c moong sprouts
- 1/2 c purple onion, finely chopped
- 1/2 c tomatoes, finely chopped
- 1/2 c yellow bell peppers, diced small
- 1/2 c cucumbers, diced small
- 1/2 c ripe mango, diced small
- 1 yellow dragon fruit, peeled and diced small
- 1 tsp Kashmiri red chili pepper
- 1 Tbsp Chaat masala
- 1 lemon, juiced
- 1/4 c raw pistachios, roughly chopped (optional)
Instructions
- In a large bowl, add the moong sprouts along with the onion, tomatoes, cucumbers, mango, and dragon fruit.
- Add in the Kashmiri red chili, chaat masala, and lemon juice. Mix well.
- If you are using pistachios, divide the salad into equal portions then top with roughly chopped pistachios.
