I was at the grocery store the other day and wanted oh so badly to pick up a bag of Nutella cookies. My eldest was at dance class with her best friend and I just knew that if I got the cookies, the whole bag would be gone before they got out of class. I resisted but I definitely thought of those cookies the rest of the day.
So instead, I decided to make myself this amazing treat that has satisfied my craving and then some! It’s incredibly easy to make, and ready in less than 15 minutes! You literally don’t have to cook or bake, there are only 2 ingredients, well 3 if you choose to add the chocolate coating. Honestly, it can’t get easier than this recipe.

Smooth, decadent, creamy, rich, it’s all there. And my eldest who thinks all desserts cannot be healthy still has not clued in that it is uber healthy. Mom win.

Pistachio Date Truffles
Ingredients
- 1 c Pistachios
- 1 c dates (about 14-16)
- 1 c baking chocolate chips, optional
Instructions
- In a small saucepan, bring water to a boil.
- Turn off heat and add in the dates. Cover and leave in the hot water for 10 minutes.
- Meanwhile, in a food processor, add in the pistachios and blend until the pistachios resemble a coarse flour texture.
- Once the 10 minutes are up, add the dates to the pistachios and blend until everything sticks together and a sticky dough forms, about 3 minutes.
- Using a tablespoon or small cookie dough scoop, make truffle shapes.
- You can eat them like this or coat them in the chocolate.
For the chocolate coating:
- Fill a small saucepan with water and bring to a boil. Turn off heat.
- In a separate heatproof bowl, add the baking chocolate chips and place this bowl over the saucepan.
- Gently stir the chocolate with a fork until it melts and has a smooth and creamy consistency.
- Take a truffle and dip into the chocolate. Remove with the fork and place on parchment paper.
- Repeat with all of the truffles.
- Let the truffles sit for 30 minutes so the chocolate can cool and set.
- Enjoy!
