Mango Blackberry Salad with Honey Lime Dressing
Ingredients
For the Salad:
- 1 head butter lettuce, trimmed and washed
- 2 ripe mangoes, peeled and sliced
- 1 c blackberries, washed
- 1 c pistachios
For the Honey Lime Dressing:
- ¼ cup fresh lime juice
- 2 Tbsp honey
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp ground cumin
- 1/2 c olive oil
Instructions
- In a large bowl, assemble the butter lettuce then add on the mango, blackberries, and pistachios.
- In a small mason jar, add the lime juice, honey, Dijon mustard, garlic powder, salt, pepper, cumin, and olive oil.
- Shake vigorously for 1-2 minutes until combined and completely emulsified.
- Pour over salad and toss to coat well.
- Serve right away.
