Seven Layer Taco Bites

Individual Seven Layer Taco Bites that are the perfect appetizer bites for parties, BBQ’s, potlucks, games, and get togethers.  Each bite is layered to create a flawless balance of crunchy, creamy, sweet, and just a little spice for the ultimate bite.

Having a seven layer bean dip at a party is the ultimate for me.  I love a good dip and I think this would have to be one of the top ones.  It looks so pretty with all of the layers and the different colors.  But when a few people have had a go at it, the seven layers look more like mush.  Not so appetizing really.  Also, if one of the kids had a chance at serving themselves, I’d be worried about double dipping, though we are working on those manners.

These Taco Bites are perfect for so many reasons!  There’s no double dipping involved.  The shell acts as your chips so you’ve already got a handle.  Each bite is layered with beans, guacamole, salsa, sour cream, cheese, olives, green onions, and tomatoes.  These snack sized portions are ideal for grabbing and eating while you mingle, or watch the game.  Plus, they are extremely easy to serve!

Here are the ingredients you will need to build the layers:

  • Refried Beans – I like to cook these over the stovetop and add a little taco seasoning for some flavor.  This step gives the beans a creamy texture that is worth every bite.
  • Guacamole – I love the bright, silky texture that guacamole adds.  You can use homemade guacamole or store bought.
  • Sour Cream – A cool, creamy layer that balances out all the rich flavors.
  • Salsa – This is my favorite layer because it’s where the party is happening!  There are so many varieties of salsa, that you can play around with it however you like.  If you’re in a bind and need to use store bought, by all means, use store bought.  But I love playing around and have made my own classic salsa or pico de gallo as well as used Mango Pico, and even Grilled Pineapple Peach Salsa.
  • Cheese – The Mexican blend is the perfect topping to bind all of these ingredients together.  Other cheeses just don’t taste the same.
  • Toppings – There are so many options.  My favorites are tomatoes, olives, and spring onions.  You can also add cilantro, a little extra dollop of sour cream, or even crushed tortilla chips.
