Grilled Pineapple Peach Salsa

I wanted to do something this Father’s Day and so instead of the typical “Best Dad Ever” shirts or another mug with pictures on it, I chose to create beautiful memories for the girls and their amazing Dad.  I took the family to go peach picking at a local farm one fine weekend and boy did the girls have fun!  We definitely made memories!  We also ended up with a ton of peaches because the girls had so much fun picking them right off the tree, they didn’t want to stop!

Well, what do I do with all these peaches?  We had them for dessert quite a bit; I definitely grilled them too … but I wanted something else.  Something to make these peaches pop and make me say WOW!
I’ve grilled peaches in the past, (check out my grilled peach and avocado salad recipe); and I’ve grilled pineapple also.


What I hadn’t done till now, is combine the two!
20180707_094352As I sat there thinking what I can do with my fresh fruit, almost instantly, the vision of salsa came to mind.
This grilled peach and pineapple salsa is a burst of flavors!  Sweet caramelization of the pineapple and peach sugars, the smoky flavor from grilling the fruit, the spicy jalapeño, the crunch of red onions, and the acid of the lime balances it all out so perfectly.

The best part, you can eat it with chips, combine it with a baked fish or roasted chicken or even serve it with a zucchini corn cake (recipe coming soon)!   It’s so versatile, there’s not excuse to not make it!
Try it out and tell me how you liked it!

Ingredients:
1 pineapple, peeled, sliced ¾” thick
1 peached, quartered
1/2 red onion, finely chopped
1 jalapeno, finely chopped (keep the seeds and ribs in if you want the salsa spicier)
1 Tbsp, fresh mint, chopped
1 tsp salt
Zest of 1 lemon
Juice of 1 lemon

Directions:
Heat a griddle on medium heat.  Once it’s hot, lightly drizzle about 2 tsp of EVOO.   Gently place the pineapples and let them sit for 2-3 minutes before flipping to the other side.  Once they are caramelized on both sides, set aside on a plate.
On the same griddle, add the quartered peaches and let them sit for 2-3 minutes.  Gently flip to the other side and let it grill through.  Set aside on a plate to cool.
Once the pineapple and peaches are cool, diced them up and add them to a medium bowl.  Mix in the rest of the ingredients and toss until combined.
Serve with your favorite chips, chicken or even fish!
