Veggie-Packed Pasta Sauce for Picky Eaters
Ingredients
- 1 onion, diced
- 2 carrots, peeled and diced
- 1 red bell pepper, diced
- 1 zucchini, peeled and diced
- 4-5 cloves garlic, minced
- 1 ½ cups marinara sauce, any flavor
- 2 Tbsp Extra Virgin Olive Oil
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 cups pasta, any shape you like
- Parmesan cheese, grated, for garnish (optional)
Instructions
- Heat the olive oil in a braising pan.
- Add the onion, carrots, bell pepper, and zucchini and cook. Stir occasionally, until the veggies are translucent, about 10 minutes.
- Stir in the garlic, salt, black pepper, and add the tomato sauce. Mix well.
- Reduce the heat to low, partially cover the pan with a lid, leaving a small opening on the side, and let simmer, about 5 minutes.
- Remove from the heat and carefully add the mixture to a blender.
- Blend on high speed until smooth, 1 to 2 minutes.
- In the meantime, cook your pasta of choice in boiling salted water until al dente.
- Transfer the blended pasta sauce back to the braiser and add the cooked pasta to it.
- Garnish with parm, if using, and enjoy.
