Crostini are one of my number favorite appetizers. The versatility of what you can create is amazing and limitless. I’ve posted several crostini recipes before but these are my newest and latest love.
If you follow this blog or my Instagram page, I recently posted a tutorial to make garlic confit. The added layer of garlic confit to this crostini is absolutely divine. Then I used the leftover oil from the roasted garlic to caramelize my onions. Paired with sweet figs and creamy goat cheese on a toasted baguette slice, well, it’s just absolutely divine.

Caramelized Onion and Fig Crostini
Ingredients
- 1 large Vidalia Onion, thinly sliced
- 2 Tbsp butter
- 1/4 tsp salt
- 1 baguette, sliced in 1/4" slices
- 1/2 c fresh figs, washed and quartered
- 1 4oz package goat cheese
- 1 recipe garlic confit
Instructions
- Caramelize your onion. Add the butter to a large cast iron or heavy bottomed skillet over medium high heat.
- Add the onions and sprinkle with the kosher salt. Cook the onions for 5 minutes or until they start to soften, stirring so they don't crisp or brown in spots.
- Reduce the heat to medium-low, cover with a lid, and continue to cook for about 1 hour, stirring the onions every 10-15 minutes.
- The onions will reduce and become more golden as they cook, giving off a rich nutty aroma. If the onions look like they're beginning to burn or crisp, stir in a splash of water and scrape the caramelized fond from the bottom of the pan for the onions to absorb.
- Preheat oven to 400°F. Line a baking sheet with parchment paper or silicone mat and add baguette slices.
- Spread a little of the garlic confit on each of the baguette slices and bake for about 3-4 minutes.
- Remove from the oven and let cool for a minute.
- Spread the goat cheese then top with the caramelized onions.
- Drizzle a little of the oil from the garlic confit if desired.
