Crisp, cold watermelon tossed with tangy feta and fresh mint is the perfect summertime salad to have on a hot day. This refreshing salad is a great side to have with grilled chicken, steak, and even hamburgers!
As soon as summer starts rolling around, I keep an eye out for watermelons. Sweet, juicy, cold cubes of watermelon are my absolute favorite, especially on days that the hot sun seems very unforgiving. Almost 4 years ago, my cousin and her family came to visit us from England and my brother-in-law Josh (her husband) is actually the one who introduced me to this heavenly salad and I don’t think I’ve looked at watermelon in quite the same way since. The first time Josh made this salad, I became a fan of the salad and his cooking (try his Sunday Roast) and ever since, I dream about my watermelon salad during the cold seasons and can’t wait to make it in the summer months.
I love that you only need a handful of ingredients to pull this luscious salad together.
Fresh Watermelon – have I stressed how much I love to eat cold cubes straight out of the fridge?
Feta – creamy and tangy, this cheese helps blend all of the flavors together
Mint – this fresh herb adds just a hint of pepper and is one of my favorite pairings with watermelon
Lemon Juice – trust me, the juice helps make all of the other flavors pop
You can also add ingredients like cucumbers and avocado. I didn’t because for this particular time, I wanted to keep it simple but the crunchy cucumbers and creamy avocado do taste really good if you chose to add them in.
