Mango Lassi

Growing up, mango lassis were one of my favorite to order when we ate out at Indian restaurants.  The sweet mangoes, the tangy yogurt, and the hint of rose at the end of each sip…. oh so delicious!  The fact that mangoes are my absolute favorite fruit just adds to my love for this lassi!

A summer time must have, even my girls look forward to having a glass almost daily which just makes my heart happy.  Easy to whip up, you don’t need much.  A blender and the ingredients are all you have to use.  I did use a dash of rose syrup to give it a summer-y floral hint which takes this lassi to a whole new level.

Have this delicious mango lassi as an afternoon snack to cool down in the heat, or pair it with some delicious Indian food.  It pairs well with Masala Omelette for breakfast, or even a lunch time drink with a Desi Masala Bowl or with dinner when you try out this Instant Pot Chole.

Tomato Avocado Cucumber Salad

Summer salads are my favorite.  Simple ones that take less than 10 minutes to make are even better.  Ok let’s be honest, pretty much any salad is my favorite.  They’re just so delicious and fun and contrary to popular belief, don’t have to be filled with just greens!

When I started making this tomato avocado cucumber salad, it was originally for the girls so I can get them used to eating fresh uncooked veggies too and in salad form.  For them of course I did a simple dressing of oil, salt and pepper, and for the adults, I added a couple more ingredients to bring it to the next level.

Just like the salad, the dressing is simple and I didn’t worry about making it separately.  I just added the dressing ingredients directly to the salad and gave it a good toss.  Saves me on an extra dish and also, worrying about the ratios of oil to acid.

What do I need for the DRESSING?
Olive Oil
Fresh Squeezed Lemon Juice
Salt
Pepper
Red Chili Flakes

What do I need for the SALAD?
Tomatoes
Avocado
Cucumber
Red Onions
Oregano – lots of it
Basil – definitely tons of it

Ok I know what you’re probably thinking.  Lots of Basil and Oregano in the salad?  Have I lost it?  Actually, surprisingly no!  The peppery basil and the earthy oregano completely transform this dish!

When I made this salad, it was supposed to be for a side and I actually ended up eating a little more than a side’s worth which left no room for dinner………

So it’s safe to say this salad can be a side or an entree!

Lemon Ricotta Pancakes

I had my first ricotta pancakes a few years ago when I was out for a brunch with my girl friends.  They were light, fluffy and creamy all in one bite!  Oh so delicious!

I added a hint of lemon to these to give it a bit of tang and brighten them up.  My girls could taste it and loved it which I thought was amazing!  I believe it’s going to become our weekend tradition!

You can taste the ricotta but it adds moisture and creaminess to the pancakes that takes them to a whole other level.  It really is the perfect start to your day and weekend.

While you heat up your griddle, mix the dry ingredients in 1 bowl and the wet ingredients in another bowl.  Then combine the two and whisk so the batter is nice and smooth!  It’s really a simple recipe that doesn’t take too long.

Add in some berries while the pancakes are on the griddle or serve a bowl of berries on the side – you can never go wrong with berries on pancakes.

Spiced Pear Loaf

I love a traditional banana bread but I also love changing out the fruits and making different types of loaves.  This Spiced Pear Loaf gives me a peek into the fall with its hints of cinnamon, cardamom, and ginger; the sweet pear chunks added in… oh so delicious!

This bread uses milk and oil in addition to the pear chunks to give it just the right amount of moisture.  Use a 1:1 ratio of whole wheat flour and oats for a healthy balance of carbs, and just enough brown sugar to combine with the warm spices to bring fall home any time of the year!

Use this loaf for a snack during recess, packed in your lunchboxes, or even as a sweet treat post meals.  So delicious and scrumptious, you have to try it out!

How to Build a Cheese Board

Cheese boards are so delicious, easy to pull together and fun to share with friends, on a date night, or sometimes, even for a simple dinner with some wine!  Yes, I have eaten cheese boards for dinner, though it hasn’t happened much lately and I just found out of one my closest friends does the same with her husband!  A cheese board for dinner is actually fun!

Building one takes less than 10 minutes and you can make it as fancy or simple as you want.

TYPES OF BOARDS:
There are many different types.  One of my favorites that I use is my slate board, but I also have a wooden and a marble one.  To build a cheese board for the hubby and me, I use the slate one or the marble one for just myself.  When we are hosting a dinner I like to pull out my large wooden one so that there is plenty to go around for everyone.  If I have a party, I’ll pull out all three and save the smallest one to create a kid’s cheese board (more to come on that one).  There are some cute individual slate boards also if you want to do a social distance cheese board so each person has their own.

Cheese knives are also important and I like this set which also tells you which is to be used for the type of cheese you are serving.  A simple set like this one is also handy to have.

THE CHEESE:
Think variety with texture and type of milk.  I like to have about 3-4 different cheeses on my board.  My favorite is goat cheese, so I will always have that on my boards.  This takes care of my soft cheese but if you want a different type of soft cheese, try Camembert, Feta, or Brie.


Move on to the semi-hard cheeses and there are so many options!  One of my favorites is a wine soaked cheese that my cousin Sweetu introduced me to.  This is available in most grocery stores now so just check out the cheese section and look for one!  Some of my other favorite semi-hard cheeses include Gruyere, Manchego, and Gouda.  Pick 1 or 2 of these and add them to your cheese board.

Finally, the hard cheeses that are waiting for their turn!  Asiago, Parmegiano Reggiano, Pecorino Romano and Cheddar are some of my favorites.

Once you have picked out your cheeses, try spreading them out around the board so that you have space to include other foods.

THE SIDES:
This is the perfect time to get creative.  I always add the basics of crackers or bread and sometimes both.  You can also add in some breadsticks if you have.  Those always taste good!

Add in some fresh fruit – anything you have on hand.  Grapes are a traditional choice you can always bet on.  Other options include thinly sliced apples or pears, strawberries and raspberries.  Think color when you are adding these to your board as you want it to pop!

A little sweet is always welcome to the board.  My favorite go to includes fig marmalade or honey.  Pair them with any of the cheeses and it’s sure to become an instant hit!

If you have something sweet, there has to be space for something salty too!  I love having some nuts on the board and to add the salty to my crunchy, I include Roasted Chili Almonds.

There will be times when I want some extras.  A really good option is roasted garlic (recipe to come soon…check back!) and/or some artisan bread.  In the cheese board pictured for this post, I included an artichoke focaccia bread.  A little of the roasted garlic butter spread on the focaccia is simply divine!

Don’t stress when you build your board and just have fun.  I like to build the board about 20-30 minutes before serving.

Easy Chicken Ramen with GF Noodles

I was never a big ramen fan until my sister-in-law Sarika took me to this tiny little ramen restaurant in Oakland.  I can’t stress enough how good that ramen was.  It was simply delicious with layers of flavor in the broth and each bite just filling you with warmth and comfort.

Recently, Taste Republic and I decided to partner together to come up with some new recipes and when I saw their gluten free linguini, I knew I wanted to make ramen with it instantly.  Fresh pasta that are thin enough to substitute for traditional ramen noodles and they cook in just 3 minutes!

This recipe literally took me less than 30 minutes to make and part of the reason is I used rotisserie chicken.  A perfect weeknight recipe that’s a little different from having to precook in an instant pot or slow cooker (don’t get me wrong, I love both of those devices!) and you can still make a delicious meal in 30 minutes – yes please!

15 minute Masala Pasta

All I can say is that things are getting crazier!  My first born is starting Kindergarten tomorrow and though it’s going to be different because she’s going to be upstairs in her room instead of at a new school with new friends, I’m still an emotional wreck!  I just can’t believe she’s grown so much!  Where’s my baby that I brought home from the hospital?  I have a 5 year old now!

Let’s talk food so I don’t have to think about that… for now.  This dish actually does take 15 minutes to make.  No joke.  How?  Because I use Taste Republic‘s gluten free, fresh fusili pasta.  The more I try their fresh pastas, the more I’m loving them.  So far, the cauliflower linguini, tortellini, and now the fusili have been on point!  Even better, because it is fresh pasta, it takes 3 minutes to cook!

Once upon a time, the girls would eat nothing but red sauce with their pasta.  Then it went to green (pesto).  Then brown butter.  We are now back to the red sauce which I am thankful for because this masala pasta uses marinara sauce combined with spices to give it an Indian twist.

Here are some ingredients that are key to this pasta:

Taste Republic Gluten Free Fusili – fresh pasta that is great with taste and time!
Frozen Mixed Vegetables – this is my first hack to make this dish in under 15 minutes.
Favorite Marinara Sauce – I use whatever jar I have opened in my fridge and it works perfect
Indian spices: cayenne pepper, garam masala, cumin powder, coriander powder – this give the pasta additional depth of flavor. Add just enough to give it a hint not take over the dish!

This fusion dish is amazing because of the mix of flavors and how quickly you can put it together.  Try it out and bring a little of India and a little of Italy to your home.

Greek Tortellini Salad

If you’ve been following my blog, you’ll know I’m all about healthy and easy recipes that taste delicious.  With school starting around the corner, remote learning set for us and as new Kindergarten parents, I’m trying to stay ahead of the game and put together meals that take less than 30 minutes so I can focus on my family.

When Taste Republic and I partnered together to create some delicious recipes with their fresh, gluten free pastas, I knew I was going to hit the spot with all of my cooking goals (it took me about 20 minutes to make this one – also because I kept having to add ingredients that were “disappearing”).  I have been having so much fun trying out all the different ones that they have and their 4 cheese tortellini is one of my favorites!

The tortellinis are so delicious, light, and filling.  You can taste how fresh they are and they cook in just 5 minutes!  I did add a few twists to this salad which take it to a whole new level.

Here’s what you need to make this Greek Tortellini Salad:

Cheese Tortellini – fresh gluten free tortellini made by Taste Republic works so well with this recipe but if you don’t have access, you can use any fresh or frozen tortellini.
Grape or Cherry Tomatoes
Cucumbers
Olives
Chickpeas 

Avocados
Fresh Basil – yep, this takes the flavor up to a whole other level
Feta Cheese
Greek Salad Dressing – I added quite a few seasonings and some red chili flakes to mine to give it an additional layer of flavor

If you have little helpers in the kitchen like I do who eat most of my ingredients as I’m cooking (they call it quality control), then I suggest increasing the quantity.  I’ve lost pretty much every single veggie in this salad to my little munchkins and it makes my heart full that they love eating this salad as much as I do.

This Greek Tortellini Salad is great to eat right away or even if you refrigerate it and have it at a later time.  It can keep in the fridge for up to 2 days, but if you are planning on eating it later, I recommend adding the feta right before you are ready to eat it.

A perfect salad for the summer, you can make this for about any event!  Serve it for lunch or dinner, take it on a picnic, as a side for a barbecue, or even some backyard camping!

Roasted Red Pepper Hummus

Hummus is one of my all time favorite snacks and the fact that it is so healthy doesn’t hurt.  Rich in protein, fiber, folate, iron and packed with antioxidants, I really can’t feel guilty if I finish off a container of hummus on my own.  Yep, I do that.

I’ve been playing around with this roasted red pepper hummus recipe for a while now.  I love how pretty and red the color of it is, the smoky and spicy flavor combined with the creamy texture is just perfect!

How do I eat hummus?

  • add it to a MEZZE platter
  • use it as a SPREAD on a sandwich
  • use it to make DEVILED EGGS
  • use it as a base for PIZZA
  • use it as a creamy PASTA SAUCE

I have a secret ingredient in this roasted red pepper hummus that you’re never going to believe.

How to make a Nutty Granola

Homemade granola is the best!  It’s healthy, you know exactly what ingredients are going into it, and there is so much room to play around with it!

Can you tell I made this one all about the nuts?  I added chopped almonds and pistachios to this granola and it tastes so delicious!  Crunchy and scrumptious, and the girls an I couldn’t stop eating it.

My favorite part of this granola recipe…. it takes 5 minutes to toss the ingredients together and only 20 minutes in the oven!  Yep.  Granola in less than 30 minutes.  It’s possible people!

What to use in a Nutty Granola?

OATS:  always a basic ingredient, I use the old fashioned as these are the best to bind.  I don’t recommend using the quick oats as they are thinner and (as the name suggests) cook faster which can lead to other ingredients in the granola being partially cooked.

NUTS:  any of your favorites will do.  Cashews, pecans, and walnuts taste great too!  Lately I’ve been on a pistachio and almond craze hence that’s what I used in this one

SWEETENER:  traditionally honey or maple syrup is used.  In this recipe, I changed it to agave.  Any of the three sweeteners work, just substitute it out for a 1:1 ratio.

What can I eat my granola with?
Make a YOGURT PARFAIT with it

Sprinkle it on some vanilla ICE CREAM

Eat it as CEREAL for breakfast with some milk

Indulge in a little bit as an AFTERNOON SNACK

What do I need to make this granola?
Besides the ingredients, all you need is a mixing bowl, spatula, and a baking sheet.  So simple!

Oreo Cheesecake

From as far back as I can remember, my brother and I have always loved oreos.  Dunking them in milk, twisting them and eating the cream first, in shakes (mostly from fast food places), or hiding in the pantry and eating them (so my kids don’t catch me).

So many years later, cookies and cream remains our favorite flavor; definitely a go to for me.

Monday is Raksha Bandhan which is a big festival for Hindus.  In a nutshell, this is a celebration between brothers and sisters where we promise to protect and honor each other.  The sisters usually feed the brothers their favorite dessert after tying a Rakhi (kind of like a friendship bracelet) and receive a gift from their brothers as token of love (my favorite part).

Traditionally, I’ve done Indian sweets but my brother has never been a big fan of them.  Don’t get me wrong, they’re delicious, but just not what he prefers.  As I was sitting at the table planning Rakhi, I knew without a doubt in my mind I was going to make something with Oreos in it for him.

This Oreo Cheesecake is one of my favorites because it is not too sweet, is very easy to make and I don’t have to deal with a water bath.  I know the cheesecake masters are probably gasping and worried that I haven’t used a water bath, but to be honest, I don’t think this one needed it!

It is very creamy on the inside with chunks of cookie in each bite and the cookie crust just finishes off this amazing cake.

I know Cheesecake is not a very traditional Mithai (dessert) for Rakhi, but it’s all about what my brother likes and I think I hit this one out of the park.

Spinach Watermelon Salad with a Basil Vinaigrette

We’ve been doing some heavy eating lately so I decided to play around with some easy, simple salads.  I didn’t get past this one to try any others this week.  This Spinach Watermelon Salad is so good, I just want to eat it all the time!  The Basil Vinaigrette adds the perfect zing and hint of spice to bring it together perfectly.

I love to cut up the watermelon and keep in the fridge so that it is nice and cold.  The cold sweet watermelon, crunchy spinach and onions, the salty feta…. yep, I want some now!

This salad took less than 10 minutes to make (including the vinaigrette).  You absolutely have to try it out.  It’s amazing!

Baingan Bharta (Punjabi Eggplant)

If you’ve been reading my blog, you know that growing up I was not an eggplant fan.  So why am I posting 2 recipes (Baba Ghanouj and this one) with eggplant within a month?  They became a part of my adult life and I learned what I was missing out on.

I’m not sure about the timeline but I do remember maybe a few months after I got married, we had gone down to see my in-laws for the weekend.  Mom had made baingan bharta and I was trying to be nice so I ate it without telling her I was not a big fan of eggplant.  It was ingrained in me since I was a kid that you ate what you got, especially at someone else’s house without a fuss.  Man am I thankful for that specific rule!

Though I took maybe only about a tablespoon’s worth (and spread it out so my MIL wouldn’t notice – yep…. totally resorting to childhood antics), baingan bharta became a new favorite of mine.  Since then, I have tried it at various restaurants and at home but nothing compares to the way my MIL makes it.  This recipe is hers and I’m excited to share it.

Notes:
Try to pick eggplants with fewer seeds as this will give you more flesh and will be less bitter.  Male eggplants tend to have fewer seeds and to tell the difference, at the bottom of the eggplant, there will be an indentation.  If it is deep and shaped like a dash, the eggplant is female, if it is shallow and round, it is a male.

If you do end up with an eggplant with more seeds, after roasting the eggplant, don’t skin it right away.  Let the eggplants sit on a tray and continue steaming to soften the seeds.

You can store the roasted eggplant in the fridge for up to 3 days or in the freezer for up to 1 month.

Spiced Plum Crumble Bars

One of my very good friends, Diana, has a plum tree that produces an abundance of plums every year.  One of my favorite memories is when Sanaya was just over a year old, we had gone to her house and she let us pick plums in her backyard.  We had so many plums in our hands, I had walked away to put them in a basket.  When I came back, Sanaya had eaten half a plum (most of the juice was around her mouth and on her clothes) and was holding another she was getting ready to dive into.  It was one the best afternoons ever!

We are a fruit loving family and we don’t discriminate (well, unless it’s mangoes – then everyone has to fend for themselves while I devour them).  At any given time, there’s always fresh fruit in the house and I love that my girls share mine and hubby’s love for them.  In honor of Diana’s plum tree (which I heard may not be around much longer and I almost cried), I got creative and added a little spice spin to these crumble bars.

I love this recipe because it is so easy to come together.  For the filling, I stayed true to Salted Mint‘s filling.  I tried out a few different variations but I love this one the best because it is simple, adds the warmth of star anise and cinnamon and tastes amazing!

For the crumble, I added hints of ginger and cardamom (I seriously felt like I could call this a Chai Spiced Plum Crumble because of the similar spices used). And the best is I can use the same mixture for the crust and crumble!

For the oats, I used old fashioned oats and mixed it by hand.  You can absolutely pulse it in a food processor until you get a crumbly mixture.

I don’t think anyone can stop eating just one bar!  These are so crumbly, flaky, sweet, tart, and have just a little hint of spice which just warms your insides up!

This recipe makes about 16 squares in a 8×8 baking pan.

Notes:
To store, place in a sealed container and keep in fridge for up to 1 week or in freezer for up to 2 months.

Keep the skin on the plums!  I wasn’t sure about this when I first started experimenting but it just becomes a part of the jam and you can’t even notice it!

Kathi Rolls are a classic Mumbai street food that are similar to a burrito with different types of fillings, such as potatoes, paneer or even chicken.  Kathi Rolls are often confused with Frankie Rolls and though they both look similar, there are a few distinguishable differences.

Homemade Paneer

Paneer is a staple in any Indian household.  It is so versatile, the possibilities are endless.  I’ve marinated it in Roasted Cilantro Mint Chutney and grilled it over the BBQ, you can also grill it and use it as an addition to a salad, make Paneer Cabbage Cups, Matar Paneer, and most famously known Palak Paneer.

It may sound daunting but making paneer at home is actually very easy.  There’s literally 2 ingredients involved – milk, and an acidic agent to separate the curd.  I like homemade better than store bought because you can choose which type of milk you want (low-fat or full-fat) and there are no preservatives like in the store bought ones.

How to make paneer at home:
Step 1: Boil the milk

Step 2: Add in your acidic agent and keep stirring to help the solids separate from the whey

Step 3: Drain the whey so you have just the solids left over

Step 4: Rinse the solids to remove smell and taste of acidic agent

Step 5: Squeeze out excess water and hang the paneer to remove moisture

Step 6: Mold the paneer into desired shape

Step 7: Remove the block of paneer from the cheesecloth and use as desired

Notes:
1. I suggest double lining the cheesecloth so that it is more sturdy and holds the paneer well when draining. This is the cheesecloth that I use and love!
2. Acidic agents that can be used are lemon juice or vinegar.  I’ve found vinegar works better with curdling the solids without leaving behind a tart taste in the paneer
3. Keep the acidic agent close by so you can use it as soon as the milk is ready so it doesn’t boil over.
4. If you need to add more acid, add a teaspoon at a time.  Adding too much can make the paneer rubbery

Best Ever Baba Ghanouj

Growing up, I was never a fan of eggplant.  I’m not sure if it was the seeds, the flavor, or the way it was cooked but I just didn’t take to it.  So imagine my surprise when I went out to a Mediterranean restaurant with some friends and ended up loving my first bite of Baba Ghanouj!

Yep.  It was love at first taste!

The smoky flavor, the silky texture, and a guilt free snack all rolled into one.  What’s not to love?

Roasted or Grilled?
I personally love it grilled either over the stove or especially on a bbq,  The flavor of the char stays in every bite which totally makes this recipe so amazing.

How do you eat it?
Baba Ghanouj is usually served as an appetizer with pita bread and crudités.  I have on occasion been known to add it to a Falafel bowl if I’m in the mood.  It tastes really delish!

This particular recipe is made without tahini, which is a sesame seed paste traditionally used to make baba ghanouj and hummus.  I did add a lot of garlic and some cayenne and smoked paprika to enhance the smoky flavor.

Honestly, both work but I prefer my food processor as it gets the job done quicker and I prefer a smoother texture.

Sausage & Zucchini Linguini

I’m a firm believer in easy meals that are healthy and don’t take much of my time.  This Sausage & Zucchini Linguine is just that.  It literally took me 15 minutes to make (with Aishani in the kitchen “helping” me) and was loved by everyone.

Here are a few things I like about this pasta dish:

  • Gluten Free (cauliflower based linguine …. so delicious and guilt free!)
  • Ready in 15 minutes!
  • The combination of sausage and spices packs a punch of flavor
  • Bright and colorful veggies

  • A little munchkin, who in the name of cooking with me, ate a good amount of my sausage and bell peppers during the cooking process

Breakfast Soufflé Bites

These Breakfast Soufflé Bites are so quick to make, delicious, and fun to play with the toppings.  Even better, you can make them ahead and freeze them to reheat on a busy morning.

Light, airy and packed with protein and a variety of nutrients, you don’t have to worry about what healthy breakfast to make in the mornings.  Wrap them in foil, pop them in the freezer and when you want to eat them, reheat in the toaster oven or oven and they’re the perfect breakfast on the go meal.

Rainbow Fajita Bowl

Summertime salads are one of my favorites to eat.  They’re simple, light, filling, and don’t take much time in front of the stove or oven.  I love this Rainbow Fajita Bowl because it is so easy to pull together and you can eat it as a dinner meal or prep it on the weekends for weekday lunches.

It’s vegan but if you’re looking to add in some chicken, super simple to do that too.  I’ll include it in the notes below!   You can marinate the chicken 30 minutes ahead or overnight but still get an amazing, tasty, juicy chicken too!

But on to my bowl.  I just love the colors in this salad.  And the fact that my girls ate it because of the rainbow foods (ok, well maybe they ate one leaf of salad but at least I got one in!).  Drizzle with some chili lime dressing and you’re set!  The spice, the crunch, the sweet corn… I think this salad bowl is calling my name for lunch again today!

Roasted Cilantro Mint Chutney

Growing up in an Indian household, chutneys are a must. They are an integral part of any Indian household. Whether you are eating Dosa or Adai Waffles / Lentil Waffles with tomato or coconut chutney, or samosas with cilantro or tamarind chutney, or Kati Rolls or Bombay Masala Sandwiches with chutney used as a spread, it’s always prominent in Indian food.

There are so many different kinds of chutneys prepared so many different ways, I just love the versatility of these dips.  I tried to a different approach to my Roasted Cilantro Mint Chutney by roasting the cilantro and mint with some cashews, chickpea flour, and plenty of spices.

As you roast the herbs, they develop a char which carries into the final product and gives it just a hint of smoky flavor and smell when you eat it.

I’ve used this chutney recipe to eat with Adai Waffles / Lentil Waffles, Paneer Cabbage Cups, Spinach Dal Paratha, Aloo Paratha, and Avocado Roti.  What will you eat it with?

Bhinda Bataka nu Shaak / Okra Potato Sabzi

Growing up, my mom would make traditional Gujarati food for dinner most days.  My brother and I loved eating a Gujarati thaali (not all the time) and one of my favorites was Bhinda Bataka nu Shaak.  The crunchy exterior of the potato that’s just soft enough to melt on the inside and the crispy okra to finish off the dish is just the perfect reminder of home to me.

When I made this dish, I was so excited to share my love for it with kids.  I’ll be honest though, they didn’t take to the okra which broke my heart.  Sort of.  They ate the potatoes though.  But I’m going to keep trying to share my love of okra and hope one day they do like it as much as I do.

But okra is so slimy!

Trust me, I know!  So my hack…. use frozen or pre-cut okra.  And fresh squeezed lemon juice.  Wait, what?  Yep, lemon juice helps break down the slime without turning your veggies into mush.

Want to know something even more cool?  The “slime” (known as mucilage) actually contains soluble fiber.  Here are a few more benefits of eating okra:

  • High in antioxidants such as beta-carotene, xanthin, and lutein
  • Good source of Folate
  • Good source of Vit. C, Vit. A, and Vit. K
  • Good source of Non-Dairy Calcium, Iron, Manganese, and Magnesium

I’ve been making these chickpeas at home as a healthy snack option so I don’t turn to junk food and my girls have fallen in love with them too.  I initially started them with a basic salt, pepper, olive oil and paprika seasoning.  We love the basic and use them not only for snacking, but in salads, tacos, as a topping for soups (yup), and pretty much in anything I can add it to. Adai Waffles / Lentil Waffles

By now, I’m sure you’ve heard of my friend Janani. I’ve mentioned her in a few recipes, especially the Greek Inspired Crepes and Instant Pot Kali Dal. She and I met when we were both about 7 months pregnant with our first child at an Indian store where the owner introduced us. We have been pretty close friends since and shared many recipes during our play dates and this one is inspired by her.wp-1592520709205.jpg

When Aishani was a few months old, I remember Janani came over for a play date with her eldest. She brought over this batter and asked if I had veggies she could use. I was extremely curious as Sanaya was in a picky phase (honestly, I feel both my kids have always been in a picky phase!).wp-1592520709227.jpg

She explained what Adai is and I was instantly fascinated. Basically, it is a batter made out of 4 different lentils and a little bit of rice, soaked, ground, and cooked over the stove with veggies similar to a dosa or crepe fashion. So with one meal, I’m getting protein, fiber, non-dairy calcium, folic acid, and plenty of vitamins and minerals from the veggies. Seriously, major mom win! My kids love it and eat it with yogurt and it’s a family hit.wp-1592520709178.jpg

The basic batter recipe is Janani’s. I’ve never tried to change it because it’s perfect and it works. I did play around with it and turned the Adai crepes into waffles. It’s something fun for the kids; they get a kick out of eating waffles for lunch or dinner and I know it’s one of the healthiest waffles around! The texture keeps well and tastes so soft and fluffy. For the girls, I served this with yogurt as that’s their favorite way of eating Adai. For the hubby and I, we had a topping of masala salsa on top which tasted amazing and completed this dish for us!

Adai Waffles

  • Servings: 4
  • Difficulty: easy

A savory lentil waffle filled with veggies that is healthy and delicious.

Notes:

1. The ratio of all the lentils and rice is always 1:1. Whether you want to make a lesser amount or more, the ratio before soaking will remain the same.

2. It is important to soak these lentils at least 4 hours. Soaking lentils helps remove the phytic acid which impairs the absorption of nutrients such iron, zinc and calcium.

3. If you make extra, and want to keep it for future use, you can store in the freezer. Just be sure to keep the batter plain without adding any of the ingredients as it will ruin when you thaw it out. Stores well up to 3 months in the freezer. Stores well up to 3 days in the fridge.

4. Parboiled or Idli rice works great for this recipe. If you don’t have it, regular jasmine rice works, but just be aware that when it is ground, you will get a bit of a grainy texture.

5. It is important to shred the veggies to help them and the lentils cook through properly. If the veggies are chopped and chunky, the lentils may not cook through completely (I speak from experience).

6. Use any veggies you have in your fridge. I’ve listed our favorites below.

Ingredients:

For the batter:

½ c toor / toovar dal

½ c urad dal

½ c chana dal

½ c red masoor dal

½ c idli rice / parboiled rice

1-2 dried red chilies

For the Waffles:

1 zucchini, shredded

1 large carrot, shredded

½ c broccoli, shredded

1″ ginger knob, shredded

1 tsp hing (asafoetida)

1 tsp salt

For the Masala Salsa:

½ c onions, chopped finely

1 tomato, chopped finely

1 serrano pepper, chopped finely (for a less spicy option, take out the seeds and ribs)

¼ c cilantro, chopped finely

1 lemon, juiced

1 tsp salt

1 tsp cayenne pepper

1 tsp chaat masala

Directions:

For the Masala Salsa:

1. Mix all of the ingredients tog⁸ether in a bowl and set aside to use for topping.

For the Adai Batter:

1. Soak each of the lentils and rice separately in water at least for 4 hours, preferably overnight.

2. Once they are soaked, add rice (drained of water) and red chilies to a blender with 3 Tbsp water. Blend to a thick batter.

3. Transfer to a bowl and repeat process with the lentils. If you want to combine them and blend them, that works also. Add water a little at a time so the batter is not too thin.

4. Mix this batter with the rice batter.

This batter is your base. You can make it ahead of time and store it in the fridge or freezer and use as needed.

For the Waffles:

1. In a bowl, add 1½ c Adai batter, hing and salt. Mix well.

2. Fold in the shredded veggies. If the batter is too thick, add in water, 1 Tbsp at a time, but don’t make the batter too thin and runny.

3. Heat the waffle maker on high and spray both sides with cooking spray.

4. Using a ladle, pour the batter into the waffle maker and spread across. Close the waffle maker and seal or flip and let it cook as a regular waffle.

5. Remove the waffle and repeat the process for the remaining batter.

6. To serve, spoon some of the masala salsa on top of the waffles and serve hot!

Serve with masala salsa, yogurt, mango pickle or all 3!

Instant Pot Black Eyed Peas Curry

When Sanaya, my eldest, was about 3 years old, we had gone to Pankaj’s cousin’s house for a play date.  Sanaya and her cousin Aarya are besties.  They’re only 2 months apart in age and our families have gone through the journey of parenting together since we were pregnant.

Anyways, this story is from a time when Sanaya was very picky about food, especially Indian food.  Though I feel like in her short life, she’s either been picky or a proper foodie.  Kids!

My sister-in-law, Aarya’s mother had made a black eyed peas curry.  I remember growing up my mom making this often so I got excited but nervous also.  Will Saanu eat it?  Will she like it?  I’m hoping she likes it because I’m really trying to get the girls to have an appreciation for Indian food.

Surprisingly, and luckily, she loved it and for once, ate most of her food without a fuss.  I felt like I found a magical key.  Since then, this is one recipe I make often for the girls, especially when I’m in a pinch as it takes less than 30 minutes to make.

These black eyed peas are perfect for a weeknight meal.  Not only are they delicious and quick to make, they are also rich in fiber, protein and non-dairy calcium.

Notes:
I soak them at the beginning of meal prep.  If you don’t want to soak them, simply increase the cook time from 12 minutes to 20.

You can store any leftovers in the fridge for up to 3-4 days.

For Stovetop: Soak black eyed peas for at least 1 hour.  Then boil them in 4 cups of water for 45 minutes.  Drain and add to spices as indicated in step 5.  Add only 1 c water and cook for an additional 15 minutes.

For Slow Cooker:  Follow directions below and cook on low for 6 hours.

Instant Pot Black Eyed Peas Curry

  • Servings: 4

Ingredients:

1 c dried black eyed peas, soaked

1 onion, chopped

2 tomatoes, chopped

4 garlic cloves, minced

1″ ginger knob, grated

1 bay leaf

1 tsp cayenne pepper

½ tsp turmeric

2 tsp coriander powder

1 tsp garam masala

1 tsp salt

2 c water for cooking

1 Tbsp lemon juice

1 Tbsp olive oil

1 tsp cumin seeds

½ tsp hing (asafoetida)

Directions:

1. Set Instant pot to saute mode.  Add oil and let heat.

2. Add cumin seeds and hing.

3. When the cumin seeds start to splutter, add in onions, ginger and garlic.  Saute for 3-5 minutes, until the onions are tender and translucent.

4. Add in the tomatoes and spices and cook for 3-5 minutes, or until the oil starts separating from the tomatoes.

5. Drain the water from the black eyed peas and add to the instant pot.  Add the 2 c water and mix well.

6. Cover instant pot and set vent to sealing postion.

7. Change setting to manual/pressure cook mode and set timer for 12 minutes.

8. When the timer goes off, let pressure release naturally for 10 minutes before releasing the remaining pressure.

9. Add lemon juice and give a quick stir before serving.

Serve with Naan or Rice.

Stuffed Mushrooms

The hubby loves his mushrooms.  I on the other hand am not the biggest fan of them.  So when we got married and he found out I didn’t like them, he was a bit devastated.  BUT, I still make them occasionally….. especially when he comes home with a large container of them.

I secretly like it when he comes home with so many mushrooms because that means I have to get creative with them.  This time around, he brought home baby bellas and they were larger than usual, which is perfect because I knew I wanted to stuff them right away!

I didn’t want to use too much cheese in the filling, and like anything, I want to pack a punch of flavor so I opened my fridge and stared at it for a few minutes.  Seriously, I just stood and stared.  And my eyes fell on a container of chives and onions cream cheese so I knew that was going to pull it all together!

I also added red bell peppers (for color and crunch) and some paprika and cayenne pepper for a kick.  The hubby, and my sis-in-law Shivani, loved these!  Score!

Mango Pico

Mango is my absolute favorite in the whole world!  Done.  That’s it.  If I were stuck on an island and there were mangoes, I would be set.

I love this mango salsa because it is so fresh, tangy, sweet, and spicy all at the same time!  I’ve paired this the traditional way with chips, fish, tacos, fish tacos, as a dip during parties and more recently with Hawaiian chicken.  There’s no wrong way to eat mango pico!

The mango pico that I made is very easy and simple but it packs a punch of flavor.  I go a little heavy on the spice to balance the sweet of the mango and only 5 ingredients needed to make.
