Flavorful, satisfying, and addictive, these shishito peppers are simple to make with 3 ingredients and very healthy!
Have you tried Shishito peppers before? They are thinly skinned green peppers that taste amazing with a bit of char on them. Most of them are pretty mild in spice but you’ll get that odd one which hits you with a kick of spice!
When I say they are addictive, I really mean it. Every time I make these blistered Shishito peppers, I have to force myself to stop eating them. Almost as if I’m snacking on chips or popcorn! They are just SO delicious! Seriously, once they are blistered, I sprinkle a little coarse salt over them, a squeeze of lemon juice and dip them in this mouth watering garlic aioli! I’m telling you… be prepared to get addicted!
They are definitely healthier than snacking on chips and popcorn too! Rich in Vitamin C, plenty of minerals, protein, and fiber, I will definitely use these as my snack anytime! They’re also gluten free, paleo, and whole30 compliant.
How do I make these Blistered Shishito Peppers?
It is so easy. I love to use my cast iron for this one because I can heat it up just perfectly with a bit of oil, then add the shishito peppers in to hear them sizzle. Oh the sound of that sizzle! That’s it. Let them char a bit and toss them a few times so it’s cooked evenly.
Once you’ve removed it from the cast iron, that sprinkle of salt makes it! Trust me! Ok well, the dipping it into the garlic aioli does too.
The shishito peppers are vegan but if you want to make the garlic aioli vegan also, replace the yogurt and mayo with vegan yogurt and mayo. The flavor is still there and still just as addicting.

Blistered Shishito Peppers
Ingredients
- 1 pound fresh Shishito peppers
- 2 tsp EVOO
- 1 tsp coarse salt
- 1 lemon, cut into wedges
- 1 recipe garlic aioli
Instructions
- Wash and pat dry the shishito peppers. It is important to dry the peppers well so the oil doesn't splatter out when the peppers are added to the skillet.
- Place a cast iron skillet on high heat and add oil. Let the skillet and oil heat up then reduce heat to medium.
- Add the peppers and let them cook for 5-7 minutes, stirring them every minute to evenly cook them.
- Once they are cooked and have char on them, remove from heat and transfer to plate.
- Sprinkle salt right away and serve hot with lemon wedges and garlic aioli.
