If I had to choose any other fruit besides mango, figs would definitely take second place. The soft exterior, the honey sweet flesh, and the crunch of the seeds as you eat each one is just heaven. Pair it with chia pudding topped with fresh baked granola and garnished with a sprig of mint, well, you just won’t want anything else for breakfast!
Fig season is just starting and I’m already searching Farmer’s Markets and grocery stores for all the figs I can get my hands on. Whether I’m eating them straight from the box, with some goat cheese, in my chia pudding, figs are like gold in my house.
The combination of the fig and chia pudding is so luscious I don’t want to stop eating which is why I tend to double or even triple the amount of chia pudding so I can make it ahead for the next few mornings.

Fig and Chia Pudding Parfait
Ingredients
- 1/4 chia seeds
- 1 c Toasted Coconut Almond Milk (or any milk you choose)
- pinch of salt
- 1/4 tsp vanilla extract
- 1/4 c granola
- 2 fresh figs, ripe
- mint sprig
Instructions
- Combine the chia seeds, milk, salt, and vanilla extract in an airtight jar and shake well to combine.
- Refrigerate at least 6 hours or even overnight.
To Assemble:
- Layer the chia pudding followed by the figs, then granola. Repeat until your jar is full. Garnish with mint sprig and enjoy every delectable bite.
